Artisan Bread Recipe

Ingredients (Standard Loaf Pan)

• 1½ cups Artisan Flour (187 g)
• 2 cups egg whites (480 g)

Directions

• Preheat your oven to 400°F (204°C). Grease or line your loaf pan.
• Add the egg whites to the bowl of a stand mixer.
• Add the Artisan Flour and mix on low speed for 5 minutes, until fully combined.
• Use a spatula to transfer the dough into your prepared loaf pan.
• Smooth the top of the loaf evenly.
• Loosely tent the pan with aluminum foil.
  Do not skip this step—it prevents over-browning.
• Bake for 1 hour.
• Remove the foil and continue baking for 15–20 minutes, until the top is golden and firm.

For a Larger Loaf Pan

Use the measurements below and follow the same steps as above.

Ingredients (Large Loaf)

• 2 cups Artisan Flour (250 g)
• 2⅔ cups egg whites (640 g)

Baking Adjustment

• Extend total baking time to 80–90 minutes
• Remove foil for the final 15–20 minutes, as with the standard loaf

Helpful Tips

• Loaf is done when the top feels firm and springs back lightly when touched
• Allow bread to cool completely before slicing for best texture
• Tent loosely—do not seal foil tightly against the loaf

Flour Storage:

Store flour in an airtight container in a cool, dark, dry place for 3–4 months. For longer storage, refrigerate for 6–12 months or freeze for up to 2 years. When freezing, remove as much air as possible and transfer to the refrigerator 1–2 days before use to prevent clumping.

Shipping: Packing peanuts may be used in some shipping. They decompose in water leaving no toxic waste and are made from static-free organic starch.
